You are going to love this recipe…Sweet potato fries are a new craze but when you add fresh homemade Chipotle Mayonnaise, it just brings them to a whole new level.

This mayonnaise can be served with cooked or raw veggies, including raw sweet potato sticks, which are delicious by the way. It’s great with tortilla chips or regular fries, fish, chicken or any other meat.

Purchase long skinny sweet potatoes, they are better for making wedge fries. Slice the potato horizontally, into 4 long pieces. Cut each piece into wedges by rotating your knife, left then right, at an angle.  Toss the wedges in  olive oil and bake at 425° until done. I like them a little underdone, my kids like soft, so I’ll leave the baking time up to you.

While your potatoes are baking assemble the mayonnaise.

1 cup organic mayonnaise
Juice of 1/2 lemon or 1 lime
3 tablespoons of unpasteurized liquid honey or raw agave syrup to taste
1-2 tablespoons Chipotle Chili Powder, more=hotter!

Mix together in a serving bowl and refrigerate until serving time.

Substitution: You can use regular chili powder if you can’t find Chipotle, it’s almost as good…
