These handrolls make a delicious lunch or dinner.
If you are especially hungry, you’ll want two.
1 sheet raw nori
1/2 ripe avocado sliced
organic romaine lettuce or baby spinach
sliced red or green pepper
sliced mango (optional)
sprinkle of unrefined sea salt
1-2 tsp organic mayonnaise (not raw but delicious!)
Lay ingredients down centre of the nori sheet. You may add any other vegetables you like.
Roll in a cone shape and eat immediately.
Tip: A perfectly ripe avocado has just turned dark green and gives slightly when pressed. If your avocado is still bright green, leave it at room temperature until it ripens. You can refrigerate it once ripened to keep it fresh longer, but don’t refrigerate it before it’s ripe or it won’t ripen properly.
