Potassium broth is an excellent source of antioxidants, vitamins and minerals, which help to increase energy and cleanse the body. It can be given during illness when eating is difficult or not appealing, or can be used as a detoxifying agent during cleansing. It is both comforting and nourishing.

Chop and add to large saucepan,

4 large carrots
4 stalks celery
2 large potatoes with skin
½ head of cabbage
½ head broccoli
½ head cauliflower
1 large onion
1 clove crushed garlic
small bunch parsley
2 tblsp dry sea vegetables
2 tsp Miso (to be added after cooking)

Cover with fresh water and simmer gently for 20 to 30 minutes. Pour broth through strainer and discard vegetables. Add miso and stir gently. Store in a glass jar in the refrigerator for up to 3 days or freeze for future use.
