Rapini is a slightly bitter cruciferous vegetable, like tiny broccolis with leaves and tender stems. Rich in protective antioxidants, minerals and vitamins.
Ingredients
One or two bunches of fresh Rapini
Olive oil or Sesame oil
Good pinch of unrefined Sea Salt
2 Garlic Cloves
1/4 cup Nutritional Yeast
Method
Add oil/fat to fry pan on medium high heat.
Wash Rapini, trim tough ends from stems. Add to pan with a good pinch of unrefined sea salt.
Add finely chopped garlic cloves.
Turn Rapini stems until they are just soft and very dark green.
Remove from heat, add to plate and sprinkle with up to 1/4 cup Nutritional Yeast, before serving.
Alternative
Omit salt, garlic, and nutritional yeast. Add generous sprinkling of organic Soy Sauce or Tamari sauce.
