Great on burgers, salads or eaten as a snack. These onion rings are better than their deep fried unhealthy cousins. Delicious, savoury and nutritious!

Ingredients

  • 6 Sweet Vidalia Onions
  • 1 bag (500 grams) raw organic Cashews
  • 1/2 cup Orange Juice or Water
  • 2 tablespoons organic White Miso
  • 1 tablespoon Dijon Mustard
  • 1/4 cup Nutritional Yeast
  • Unrefined Sea Salt to taste

Method

Peel and slice onions 1/4 inch thick, separate rings and place in large pot.

Blend remaining ingredients together until smooth and creamy. Scoop into pot and stir gently so not to break rings, until all rings are coated.

Place each ring on natural Parchment sheets, being careful to not let rings touch.

Dehydrate until crispy.

Store in large glass jar.

Equipment

This recipe requires a dehydrator. For more than 30 years I dehydrated everything on round plastic trays without a temperature gauge. Last year I invested in my new 9 tray, all stainless steel Excalibur dehydrator, I can honestly say this is the best dehydrator ever! You can even purchase rectangular parchment paper sheets that you don’t have to cut into circles. I wouldn’t trade it for anything…
