Rainbow Breakfast Fruit Salad

1 red mango chopped
1 large thick slice of pineapple chopped small
1 cup seedless green grapes cut in half
1 large red skinned apple chopped with skin on
1 large sweet orange chopped small
1 large sweet orange, juiced
1 tsp finely grated fresh ginger root
1-2 tsp unpasteurized liquid honey (optional)

You can prepare this salad the night before and leave it in the refrigerator. It will last for up to 3 days.

Just before serving, you can add fresh sliced banana and/or sprinkle with a mixture of finely chopped sesame, pumpkin and sunflower seeds.
